Chicken Satay Skewers

Add this game-changer to your weeknight suppers and you won’t be disappointed. Dripped, dipped or drizzled, this satay sauce is delicious over everything. Simply, grill your choice of meat or veg and serve.
Ingredients
  • 1 pack of The Spice Tailor Indonesian Peanut Satay 
  • 1 tbsp. vegetable oil
  • 300g chicken breast, diced.

To garnish -

  • 1 lime cut into wedges, to serve (optional)
  • 30g peanuts, chopped (optional)
Method
  1. If you’re using wooden skewers, make sure to soak them in water for 30 minutes before using them. 
  2. In a bowl, mix the diced chicken with the base sauce from the smaller pouch in the kit, 2 tbsp. of the main sauce from the larger pouch in the kit and the vegetable oil and leave to marinate for as long as possible. 10 minutes is fine, but overnight in a covered container stored in your fridge is better.
  3. Thread the chicken onto the skewers and heat the grill to a high heat. Line a tray with foil and place the skewers on top. Place under the grill for 8-10 minutes, turning them every few minutes until the chicken is lightly charred and cooked through.
  4. 4. Prepare the side sauce by gently heating the remaining main sauce in a small saucepan until simmering and heated through. Serve alongside the skewers. 
  5. 5. Scatter over the chopped peanuts, squeeze over some lime and tuck in!
